Grease and line an 8\u00d78-inch (20\u00d720 cm) square baking dish with parchment paper or lightly butter it.<\/li>\n\n\n\n<li><strong>Separate the eggs<\/strong>: Place egg yolks in one bowl and egg whites in another.<\/li>\n\n\n\n<li><strong>Whip the egg whites<\/strong>:\n<ul class=\"wp-block-list\">\n<li>Beat egg whites with a pinch of salt (and cream of tartar if using) until stiff peaks form. Set aside.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Mix yolks and sugar<\/strong>:\n<ul class=\"wp-block-list\">\n<li>Beat the egg yolks with the sugar until pale and creamy.<\/li>\n\n\n\n<li>Add melted butter and vanilla extract. Do <strong>not<\/strong> overmix. You want some lumps\u2014this helps form the layers.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Bake<\/strong>:\n<ul class=\"wp-block-list\">\n<li>Pour the batter into the prepared baking dish and smooth the top.<\/li>\n\n\n\n<li>Bake for 50\u201360 minutes, or until the top is golden brown and doesn\u2019t jiggle excessively in the center.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Cool<\/strong>:\n<ul class=\"wp-block-list\">\n<li>Let it cool completely in the pan.
