Every summer, my wonderful neighbor Susan showers me with more zucchini than I can use.

Skillet Zucchini Parmesan is a comforting, cheesy dish that’s easy to make and full of flavor. Tender zucchini slices are coated in a creamy Parmesan sauce, layered with savory marinara, topped with melted mozzarella, and baked until golden and bubbly. Best of all, it all cooks in a single skillet, making both preparation and cleanup simple.To make it, start by heating olive oil in a skillet over medium-high heat and sautéing sliced shallot, minced garlic, and a pinch of chili flakes until fragrant. Deglaze the pan with dry white wine, scraping up any bits from the bottom, and reduce slightly.

Add heavy cream, Parmesan, and a little mozzarella, stirring until smooth and creamy, then season with salt and freshly cracked black pepper. Fold in zucchini slices to coat them in the sauce, spread everything evenly in the skillet, spoon marinara sauce over the top, and sprinkle with the remaining mozzarella. Bake in a preheated oven at 425°F (220°C) for about 25 minutes, until the cheese is bubbly and lightly golden and the zucchini is tender.
