Amish Cabbage Noodles

This Amish Cabbage Noodles dish, often called Haluski, is a classic example of simple comfort food made with just a few humble ingredients. Despite its simplicity, the recipe delivers rich flavor and satisfying texture. The main ingredients—green cabbage, wide egg noodles, butter, and black pepper—work together to create a warm and hearty meal that feels both rustic and comforting. As the cabbage slowly cooks, it softens and releases natural moisture, which helps steam the noodles and creates a light, buttery sauce. The generous amount of butter plays an important role, giving the dish its signature richness while mellowing the cabbage’s natural bitterness. Meanwhile, freshly ground black pepper adds a gentle kick that balances the buttery flavor and keeps the dish from tasting too heavy.

Preparing this dish is straightforward and perfect for a slow cooker. First, slice a medium head of green cabbage into thin ribbons, removing the core. Lightly grease a slow cooker and begin layering the ingredients by placing half of the cabbage at the bottom, followed by half of the uncooked egg noodles. Drizzle with melted butter and sprinkle with black pepper, then repeat the layers. Keeping the cabbage at the bottom allows it to release moisture during cooking, which helps soften the noodles above it. Cover and cook on high for about 2½ to 3 hours or on low for 4 to 5 hours, avoiding frequent lid lifting so the steam remains inside. Once finished, gently toss the mixture together until the noodles appear glossy and the cabbage becomes tender and translucent. The result is a warm, buttery dish that highlights how a few basic ingredients can come together to create a flavorful and comforting meal.
